Sucraid or other enzyme replacement for sucrose for all phenotypes is required for this recipe.
Carrot Latkes

Ingredients

4 cups shredded carrots (especially nice if you can use orange, yellow and red carrots)
1 cup scallions, chopped
2 eggs beaten
1/2 cup soy flour or all purpose flour
1/2 cup golden rasins
1 teaspoon nutmeg
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon ground cardamom
4 teaspoons canola oil
Sour cream

Directions

Preheat oven to 375 degrees F. In a large mixing bowl combine all ingredients except sour cream. Spray a cookie sheet with Pam. In large skillet, drop carrot mixture into pan and fry until golden brown flattening patties for about 2 minutes on each side. When done keep warm in oven on cookie sheet. To plate top each latke with a dollop of sour cream.
